Thinking back over my childhood, certain foods and flavors come to mind. Little Debbie Snack Cakes….Fudge Rounds, Star Crunch, Nutty Bars and of course, Oatmeal Cream Pies. Interesting how memories of childhood are sometimes better than reality. The last time I had a bite of a Little Debbie snack, well, let’s just say it was better left in my memory and not my mouth.
We pass by those boxes of little packaged goodies and once in a while one of the children will ask to buy them. In our home, a box of these little snacks would be gone in a snap and everyone would still be hungry. Toss in the list of ingredients and preservatives, I think we will pass on that snack idea!
You know we love to cook Simply from Scratch so when a recipe for Oatmeal Creme Pies from Macaroni and Cheesecake popped up on Pinterest, I knew it was one the children would love to try. Mary happily volunteered to whip them up and see if this was a special treat to add to our recipe box.
The recipe seemed simple enough; although the cream filling did give Mary a small challenge. The filling called for her to use egg whites and use a whisk to make them frothy. We worked on it together and the cream turned out fine although it wasn’t quite enough for all the cookies we had. No worries; plenty of people were willing to eat the soft, chewy oatmeal cookies without any cream.
The final result….doesn’t it look delicious? No 5 syllable ingredients, no preservatives. Basic ingredients you probably have in your pantry. The oatmeal cream pies didn’t take long at all to whip up and we learned a bit about dealing with egg whites and frothing.
These oatmeal cream pies were enjoyed by everyone! Will we make these again? Possible. With a bit of tweaking. We might make some changes to the cream filling. Some didn’t feel it had much flavor. However, there were no leftovers!
